Talkeetna Alaskan Lodge has received the Wine Spectator Award of Excellence annually since 2003. In preparation for each of our wine dinners, our Chef will craft a delicious array of tantalizing foods to please the palate. Then with the assistance of Assistant Manager and Food and Beverage Director, Fernando Salvador, who is also a sommelier, they carefully select the perfect wine for each course. By combining their talents, the fall wine dinner is sure to be a culinary success.

First Course:
Asian Inspired Salmon TartareMixture of minced fresh catch sockeye salmon, asian pear, sweet peppers, red onion, green onion, ginger and avocado. Tossed with sesame oil and soy blend
Second Course:
Duck Confit on a Bed of Mixed GreensShredded duck confit over a mix of artisan greens tossed with pomegranate-citrus vinaigrette, julienne fuji apples, spicy candied pecans, dried cranberries and feta cheese crumbles

Roasted Portabella-Prosciutto NapoleonLayered roasted portabella, melted fresh mozzarella cheese, polenta cake on a bed of pimento coulis and topped with shaved prosciutto

Medallion of BeefLavender-pepper crusted medallion of beef with truffle-merlot sauce on celeriac. Yukon puree and broccoli rabe
